About Egg Toast

Egg Toast is a simple dish of bread slices dipped in spiced egg & vegetable mixture and toasted to perfection. You are likely to find many different variations served as street food in Asian countries. In India, you will see street vendors making these Egg Toast all day long and they are fast selling that everyone has to queue up waiting for their turn. It is also served in school and college canteens. This Egg toast recipe uses a small amount of veggies like onions, tomatoes & optionally bell peppers. If you want to use veggies like mushrooms or spinach you may saute them first, cool and add to the beaten eggs. Fresh herbs like coriander or parsley go well. Spices like Indian red chilli powder or paprika or chilli flakes add heat to your toast. You may substitute green chilies with black pepper. Thick bread slices are best for this as you don’t want them to become too soft when cooked with the eggs. My recipe shows you how to make a single serving of egg toast in a pan on the stovetop, if you are making it for the family you can easily make it in an oven following my instructions below in the recipe card. Egg toast is eaten plain or sometimes with tomato ketchup. It can also be served with Masala Chai. If you want to serve it as a meal, Tomato Soup or this Sweet Corn Soup go well.

How to make Egg Toast (Stepwise photos)

Preparation

  1. To a mixing bowl add

3 tablespoons chopped onions (or 2 to 3 shallots or green onions) 1 to 2 chopped green chilies or ¼ teaspoon black pepper crushed 1 sprig coriander leaves or parsley chopped fine 2 to 3 tablespoons ripe firm tomatoes (deseeded & chopped or bell peppers) ¼ to 1/3 teaspoon salt (adjust to taste) 1 pinch of turmeric

Tomatoes lend a slight tang and get a melt in the mouth texture when cooked with the egg. If you do not like you can skip or replace with finely chopped bell peppers. 2. Break the egg to the bowl. 3. Beat well with a fork or a egg beater.

Make the Egg Bread Toast

  1. Heat a pan with 1 tablespoon oil or butter and spread it well.
  2. When the pan is just hot enough, dip one side of the bread slice in egg. Do not over heat the pan. Dipping the entire bread at one time will leave the egg undercooked inside the bread. So just do one side first.
  3. Place it on the pan. You can fry 2 to 3 slices at one time. 2 slices for a medium egg and 3 slices for a large egg. Make sure the flame is adjusted to medium.
  4. When the egg is cooked, set them aside and pour the egg mixture to the pan. Allow it to cook a bit and cut in the center with the wooden spoon. After the previous step, you can also pour the egg over the bread and then flip them. I do not prefer that way since it will mess up the pan while flipping and the egg remains undercooked on the sides. If you like that way, you can try. Make sure the egg is thoroughly cooked.
  5. When it is almost cooked but still moist, place the cheese(optional) & bread slices over it. Press with the wooden spatula.
